That Good ‘Ol Deep Fried Chicken
Deep fried chicken must be the most common dish in the whole world. From expensive
restaurants, to your own mother’s cooking, fried chicken is undeniably
a favorite to many people. Fast foods such as Kentucky Fried Chicken and McDonalds
have catapulted this simple dish to stardom. Who can resist its crunchy and
juicy taste?
Known to many Americans as Southern Fried Chicken, this mouth-watering dish
has originated from American-African people. Back then, the frying of chicken
is not known to both Western and European countries, but was a very common preparation
in Western Africa. The slaves that were brought to America greatly influenced
western cooking, including chicken frying.
There are various ways to prepare deep dried chicken; going from simple frying
to complicated preparations. Some will not consider it fried chicken if it has
not been soaked overnight with buttermilk. Coating the chicken with flour is
the most common way, but others opt for breadcrumbs or beer batter. In battering
the chicken, you can set-up three shallow bowls; each containing flour, egg
batter, and bread crumbs separately. Dip the chicken on each bowl, working your
way from left to right. Once all chicken pieces are coated, let them sit for
a while so the batter/mixture can settle. If you have time, you can put the
coated chicken pieces in the refrigerator for an hour or so.
In deep-frying, it is recommended to use neutrally-flavored oil such as peanut
or safflower oil. You can also use lard or vegetable oil. These oils have high-smoking
point, which means that they won’t burn easily, avoiding the bitter and
scorched taste in fried foods. Butter or virgin olive oils have very low smoking
points, and are not recommendable for deep frying. Use a generous amount of
oil to cover every part of the chicken, thus the term deep-fried.
You need an iron skillet to achieve the golden brown and crispy fried chicken.
Cast iron pots provide equal heat distribution and even temperature. Pour the
oil on the pot and turn the stove to high heat until the oil reaches 365 degrees
F. The oils should be about an inch deep for the chicken to be submerged on
it. For accurate measurement of the heat, purchase either a large-dial thermometer
or a candy thermometer that can be hooked on the pot. Once the desired temperature
of the oil is achieved, lower the heat of the stove. Using a thong, carefully
dip the chicken pieces into the pot. Fry the chicken in batches so as not to
overcrowd the pot. Overcrowding lowers the oil’s temperature, resulting
to soggy chicken pieces because of too much oil absorption. The ideal cooking
temperature for fried chicken is 165 degrees F. To know if the chicken is already
cooked, it should be golden brown; crispy on the outside but juicy on the inside.
You can stick a fork on one chicken piece to check if it has achieved the crispy-but-juicy
texture. When the chicken have been cooked to golden brown, remove it from the
pot and transfer it to a platter lined with table napkins (to absorb the remaining
oil). Serve it with gravy, and to truly enjoy the southern meal you can combine
it with mashed potato or corn on a cob.
SUNDAY FRIED CHICKEN
1 whole chicken or any combo of chicken pieces
1 to 2 c. of flour for coating
Salt and pepper to taste
4 tbsp. butter
4 tbsp. Crisco
2 beaten eggs
Wash and dry chicken parts. Combine salt, pepper, and flour and coat chicken. Dip each piece in egg mixture and brown each side in hot, melted shortening and butter. Lower heat and cook for about 15 minutes more on each side. Use heavy iron or aluminum frypan if possible.
Remove from pan and drain on paper towels. Pour all but 3 tablespoons of fat from pan and return to heat. Add 3 tablespoons flour to pan and stir with fat until lightly browned. Add 2 cups of milk and some parsley or parsley flakes and cook on medium heat until thick. Put in gravy boat and serve with the chicken that you have arranged on a platter.
OVEN FRIED CHICKEN
3 lbs. chicken parts, skinned
6 tbsp. flour
1 tsp. salt
1 1/2 oz. breadcrumbs
1 oz. parmesan cheese
1 egg, beaten
2 tbsp. water
In a bowl, mix flour and salt. In another bowl, mix egg and water. In yet another bowl, mix crumbs and cheese.
Dip chicken in first bowl, then second bowl, then third bowl. Put chicken in 9" x 13" pan sprayed with Pam. Bake 1 hour at 375 degrees.
OVEN FRIED CHICKEN BREASTS
8 skinless, boneless chicken breast halves
1/2 c. plain nonfat yogurt
1/2 box Ritz crackers, crushed into fine crumbs
Dip chicken in yogurt and roll in cracker crumbs. Place chicken in baking dish and bake in 350-degree oven 30 minutes on each side. Makes 8 servings.
GOURMET CHICKEN
1 c. uncooked rice
1 can mushroom soup
1 can onion soup
1 can water
1 frying size chicken or breasts (can cut boned breasts into sm. pieces)
Salt & pepper to taste
Place uncooked rice in bottom of 9"x12" pan. Pour soups and water over rice. Mix slightly. Place chicken on top. Cut chicken (smaller pieces) can be stirred into mix.
Bake at 325 degrees 1 hour and 15 minutes. When using big chicken pieces, turn when browned on one side.
